Pasta Amatricana
Boil up large saucepan of water.
Whilst water is boiling, In a frying pan add the following:
6 rashers of bacon fried until brown (not crisp!)
Remove and in the bacon fat fry (plus a little olive oil if dried out):
An onion sliced in half lengthways and then half moon shapes quite thinly.
1 clove of garlic crushed
1 tin of chopped tomatoes
1 red chilli chopped
Let the onions caramalise slightly (very slow fry for 15 mins) then add the other ingredients. Cook for about 5 mins then add bacon. Cook for further 20 mins and leave.
Add pasta to boiling water and cook for 6 – 7 mins then pour over sauce!!
Serve with green salad.
